Warm Med veg & microgreen salad with feta cheese
A comforting, healthy winter warmer!
Drizzle extra virgin olive oil & lemon juice over a good handful per person of rocket leaves & microgreens, add salt and pepper.
Roughly chop aubergine, courgette, tomato, red pepper and garlic and fry for a few minuites until the veg starts to soften.
Add some chunks of feta cheese til it melts slightly.
Add the veg and the cheese to the leaves and toss until mixed.
Serve and enjoy!
